Lambic
A style of beer which has been 'spontaneously fermented' whereby the wort is open to the air. This allows local yeasts to interact with the beer. Flavours can be quite sour, sweet or bread like! Lambics can be broken down into three types: Straight Lambic (straight from the barrel), fruit lambic (whole fruit gets added) and gueuze or gose (combining young and old lambics to achieve a more controlled flavour).
